

Hello, I'm David Pierson and
I would like to welcome you to my website Piersons Butchers.
I am a traditional Welsh Butcher and sell only the finest
meat produce.
My experience goes back to 1961 where
I ran a 200 acre farm in Glyndyfrdwy. In 1975 I took an interest in
a butchers shop based in one of the most picturesque places
in North Wales, Llangollen. During this time I was using
the Beef, Lamb and Pork from my own farm. I always made a point of
working this way in order to trace the origins of all of my produce.
All of our Beef is produced locally. We buy and sell only native breeds, mainly consisting of Welsh Black cattle. We hang the Beef from 2 to 4 weeks in order to promote the finest flavour, texture and tenderness.
All of our lambs are locally produced, mainly originating from farms in the hills and valleys of the River Dee. Our lambs are of Welsh breeds - not just from Wales. The Welsh breeds of lamb are renowned for their flavour and tenderness. We hang our lambs for 2-3 weeks before preparing for sale.
All of our pork is locally produced. I personally select the pigs from local farms. We usually hang the pigs for 1 week before preparing. Customers tell me that our meat tastes like pork used to in the olden days - excellent! This is because it is not too lean.
